They taste fine. If you don't object to, say, asparagus or eggplant, you probably won't mind the taste. What I said is they aren't worth the bother. Preparing them is fiddly, eating them is messy, and you don't get a lot out of one really. I don't object to them as offered in some restaurants, where they are turned into a dip for an appetizer or served as "artichoke hearts". But they still seem like a lot of bother for too little result.

Some exotic fruits are similar. Starfruit just doesn't have much taste, in my opinion. Cherimoya tastes OK, but picking out all the seeds and getting that horny skin off is too much trouble. Prickly pear ditto, plus it's slimy and way too sweet. ;)
