Actually it started out as Rainday, but the sun did come out later. Made apple pancakes for breakfast, did chores, read the Sunday funnies (no exceptionally good jokes today.)
Went back to the orchard to get some Melreuge (also called Melrose) apples. These are a late red apple that is rather large and very firm. Great for pies and stuff, but also good enough to just eat. Very crunchy and juicy, but not too sweet.
Went on Tapestries for a while when I should have been doing productive things, and got to be with my wonderful pegasus mount. That was nice.
Made lasagna for dinner with sliced zucchini in it, and home made foccaccia with cherry tomatoes and olive oil on top. Also a salad of sliced apple with blue cheese crumbles. Now we should starve ourselves for two days to make up for it. But it was good.
Cold and damp out now, I'm betting on heavy fog tomorrow. To bed, it's late enough.

Date: 2006-09-25 09:40 am (UTC)Zucchini works out beautifully in lasagna. This time of year, spinach is out of season and zucchini are in. You just slice them very thin and use that in place of the spinach.

Date: 2006-09-25 05:18 pm (UTC)These were more like regular pancakes, and you'd come close if you just peel and chop an apple up fine and mix it with pancake batter. I make the pancake batter from scratch, separating the eggs and beating the whites, then folding them in so the pancakes are lighter and airier, but the apple will work nicely just mixed even with boxed pancake mix. Use a good, strong flavored cooking type apple, like a Spy or a Melrose, for the best results. Common table apples like Delicious or Gala will just get lost. Jonathan will work if you can get those.
