That's what I threatened to make from turkey leftovers, and Gary dared me. So I did it. Well, more or less. We had what probably should be described as turkey quesadillas actually. Dice up sweet onion and cilantro, shred cooked turkey and cheese (I used a mixture of swiss, brick, and cheddar, but chihuahua or jack would probably be a little better.) Heat a griddle and spread a few drops of oil on it. Press a whole wheat tortilla onto the griddle and let it sizzle for half a minute or so, until the bottom starts to blister. Then put a little pile of cheese, turkey and onion-cilantro mixture in the middle and spread it out, staying at least a half inch from the edges. Cover with another tortilla and press down with spatula. Cover the pan for a minute or so to melt the cheese, then turn the whole thing carefully to crisp the other side a bit. Cut into quarters (a pizza cutter works wonders) and transfer to a hot platter. Repeat until filling and/or tortillas are used up. Serve hot and crispy with the usual Mexican sides: shredded lettuce and tomatoes, refried beans, spanish rice, salsa and a dab of sour cream. I recommend a rich red wine too. By the way, if you have the kind of cranberry sauce that is made by grinding up frozen cranberries and whole oranges, that qualifies as a salsa, so have at it. ;)

Since I don't eat beef, I use ground turkey a lot when the recipe calls for beef. I haven't been able to find hot dogs that are "pure" pork, so I use chicken or turkey dogs instead. I rather like the stuff.

All pork hot dogs are likely to be labeled as sausages, actually. I believe Eckrich brand Smokies are in essence pork hot dogs.

Turning them is the trick, especially if you skimp on the cheese to reduce the fat content as I did. Get the spatula under, then press your hand down on the top tortilla to hold it together as you turn. Otherwise it's all pretty simple. I love tortillas when they are crisp on the outside and still warm and soft inside like that.

I will occasionally butter a tortia and throw it in a smoking hot skillet till it blisters and eat that

I wonder if I can find the whole wheat ones. Im having to switch to that for most bread products as is.

Our local supermarket is smallish, not part of a chain. But they have a good selection of tortillas, including not only the whole wheat, but some with vegetables or sprouted grains mixed in. You can use corn tortillas in the same recipe, should be no problem finding those. Making tortillas is pretty easy too, just takes a little extra time. If you can get whole wheat flour, you'd be set for that approach.

Small town. We have the Walmart, a small supermarket chain with a modest selection and the overpriced limited selection healthnut store.

I like the latter mostly to pick up herbs and actual genuine ginger soda

ya,but ya know what...its like 59 here right now and I am freezing my ass off.

Besided people say its so hot here and ya it is for about 3 months and the rest of the year is nice......to me thats a hellova lot better then being in miserable cold somewhere for 5 months outta the year or dealing with humidity.

I cant be anywhere cold or wet...I would rather drop dead first...I like the heat and its just fine wif me.

That's more than we have here. Marengo has a population of 3000 or so, and just the one grocery store, a member of the Certified Grocers cooperative. Not even a WalMart here. The closest WalMart is in Harvard, 16 miles away and it is a small one that doesn't have a full grocery section.

Yep, my mate plays dulcimer and has several of them in fact. I'm more conventional. I play ordinary keyboard instruments and some winds.

With little tiny milking machines of course. Production quantities requires a lot of chihuahuas and milking around the clock. ;p

Actually that's what I've always said about chihuahua cheese. I find that jack is an excellent substitute and much less expensive.

Well, it's unlikely you'd have a quasi-insane AI providing your milk for you, so even if you did like it you'd probably be safe.

Good to be heard. I've been quieter out here in the aether than I'd like, actually, and am working to rectify that, but life is still very busy on a lot of levels. I do think of you often, though, especially when I see the lovely soft horsie you sent :)

I hope all is well even beyond what you've been posting about (which I do read). Life is pretty good, just... there's a lot of it lately ;)
