Ticky-tacky turkey taquitos
Nov. 25th, 2006 07:15 pmThat's what I threatened to make from turkey leftovers, and Gary dared me. So I did it. Well, more or less. We had what probably should be described as turkey quesadillas actually. Dice up sweet onion and cilantro, shred cooked turkey and cheese (I used a mixture of swiss, brick, and cheddar, but chihuahua or jack would probably be a little better.) Heat a griddle and spread a few drops of oil on it. Press a whole wheat tortilla onto the griddle and let it sizzle for half a minute or so, until the bottom starts to blister. Then put a little pile of cheese, turkey and onion-cilantro mixture in the middle and spread it out, staying at least a half inch from the edges. Cover with another tortilla and press down with spatula. Cover the pan for a minute or so to melt the cheese, then turn the whole thing carefully to crisp the other side a bit. Cut into quarters (a pizza cutter works wonders) and transfer to a hot platter. Repeat until filling and/or tortillas are used up. Serve hot and crispy with the usual Mexican sides: shredded lettuce and tomatoes, refried beans, spanish rice, salsa and a dab of sour cream. I recommend a rich red wine too. By the way, if you have the kind of cranberry sauce that is made by grinding up frozen cranberries and whole oranges, that qualifies as a salsa, so have at it. ;)

I cant be anywhere cold or wet...I would rather drop dead first...I like the heat and its just fine wif me.

I hope all is well even beyond what you've been posting about (which I do read). Life is pretty good, just... there's a lot of it lately ;)
