Well, that makes me curious certainly. Zucchini relish was suggested, and I've never tried that. We had a large one stuffed last night, and it was good. Also zucchini muffins (I find the usual zucchini bread much too sweet.)

Thanks. I thought maybe pineapple juice was the key. I may just give this a try. I have the jars and the canner, would just have to get the juice. I even have a shredding attachment for my Kitchen-Aid. :D

Sorta like Garrison Keillor's old joke about tomatoes, and how at the end of the season they are just sort of hanging out all over, on the steps, on the porch rail, on the kitchen window sill, by the phone in the dining room as if waiting to make a call...

Our tomatoes are still green though, for the most part. The zucchini, on the other hand, are invading.

Heh. Well, I probably think too much about food, actually. But these things are good and of course they always come all at once. Leave one on the vine just overnight sometimes and it will turn into a veritable zeppelin.
